Solbam Séoul

Serendipity led me to book this restaurant and it turned out to be one of the best meals that I would remember and hope to revisit for years to come. A lot of tasting menus tend to deteriorate by the time main course arrives or lose patrons’ interests, but not at Solbam. Dishes just got better and better and I actually felt sad when I finished my steak because it was soooo good. There was no spectacle, no elaborate presentation, just clean, elegant, delectable food perfectly executed. Everything was just right and everything that was on the plate was there for a very good reason. That humble palate cleanser made with yuja (yuzu), lemon and red grapes was a perfect balance of sweetness, tang and fragrance; it did not leave the slight bitter taste that many citrus granita did. If they put so much heart into a simple palate cleanser, can you imagine the other dishes? I was debating whether I should keep Solbam a secret for selfish reason 😜 but of course that would be unfair to the amazing Solbam team. I am glad that Seoul is only a short flight away because I definitely want to return to Solbam again and again. Would give it six stars if I could. Thank you Team Solbam.

An amazing and unreal experience. We went to Solbam on the last day of our trip to Seoul and it was definitely the highlight. They remarked how they do no receive many foreign customers but their English and explanation of dishes was impeccable. The food and presentation were amazing. Highly recommend, before other foreigners figure out about it!

이 곳은 최고입니다. 1. 서빙이 완벽함. 너무 부담스럽지도 너무 가볍지도 않게 필요한 모든 것을 잘 파악하고 친근하게 대응합니다. 2. 한식을 베이스로 한 파인다이닝에서 느끼기 어려운 새로운 시도들과 ‘놀람’ 이라는 감정을 들게함. 맛은 물론 충격적이게 풍부하고 맛있습니다. 3. 인테리어, 식기도구, 음식의 배치 등이 너무 아름답습니다. 파인다이닝에서 와이프가 찍는 사진을 구경하는거 전문인 인생인데, 나오는 디시마다 사진을 안 찍을 수 없었고 전문 디자이너가 따로 소속된 것이 아닌가 싶을 정도로 모든 것이 아름다웠습니다. 4. 정말 모든 음식이 다양한 맛과 식감을 각기 다른 방향으로 가지고 있었지만 그럼에도 불구하고 너무 맛있었습니다. 단 사진 안찍은 돼지볼살과 트러플슬라이스는 돼지고기가 너무 부드러웠지만 소스가 정체성을 잃은 것 같았고 트러플 향이 너무 약하긴 했습니다. 5. 구성원들이 원팀으로 움직이는 것이 너무 좋았습니다. 이로인해 1번에서 언급된 퍼포먼스가 생길 수 있는 것 같고 이게 어떤 의미인지는 방문하신 분들은 잘 아실거라고 생각합니다. 결론 음식 한가지가 마음에 안들긴 했지만 그 외 모든 것이 압도적이라 너무 맘에듭니다. 한국 파인다이닝 중에 제 기준으로 모수와 더불어 투탑이라고 생각합니다. 특히 상기 2번의 측면에선 원탑입니다. 금방 투스타 쓰리스타 달 것 같은데 점점 더 예약이 어려워 지면 슬퍼질 꺼 같네요.
