4-5 테이블뿐이라 예약이 언제나 힘든집. 디너 16만원으로 정갈한 코스가 나온다. 먹어보면서 느낀점은 소스를 정말 잘쓰는 집이라 아뮤즈이후엔 거의 소스가 들어간 음식위주로 나왔다. 개인적으로 아뮤즈부쉬를 어느 음식점을 가던 가장 좋아하는데 식감과 맛이 복합적이어서 아주 훌륭했다. 특히 생선요리와 소스가 가장좋았고 닭테린느에 닭간무스를 넣은 크래커가 인상깊었다. 재방문하고싶지만 예약이 너무 힘들듯.

Exquisine = exquisite cuisine, I presume. And I agree :-). Some dishes were better than others but overall it was a great experience. Briefly: 1) the snacks were stellar; 2) the egg is not just an egg but a surprise egg filled with corn, seafood, etc; 3) the few first bites showcased the mastery of balancing sweet flavours; 4) the Spanish mackerel was the least favorite: too strong in flavour and soft in texture; 5) the egg, mackerel and barley/abalone served just before the duck/hanwoo wellington beef give a sequence of 4 rich dishes. I would suggest the chef to intercalate between the 4 dishes the schisandra berry palate cleanser; 6) the 30 days aged duck breast was aged and cooked perfectly - so tender but with crispy skin; 7) the hanwoo Wellington beef was on the saltier side - the duck is a better choice in this case. And finally 8) all the desserts were a nice finish to a solid degustation menu. The restaurant was dark right from the start. I would have reduced the light progressively, as we move through the courses.
